VINEYARD: Fruit was harvested from select vineyards in a handful of the Napa Valley's most renowned appellations, including Oakville, Rutherford, Stags Leap and Carneros. Known for their distinct terroir, each of these appellations imparts its unique characteristics in the fruit, contributing to Charmstone's overall complexity.
HARVEST AND WINEMAKING: The 2007 vintage had a lot of ups and downs, with an early, cool start and several heat waves during the season. The result was smaller bunches of small flavorful berries harvested between October 14 and 18. This wine was sorted by cluster, then by berry selection before crushing. Extended maceration of 24 to 27 days on the skins extracted deep color and flavors. The wines were transferred to heavily toasted French oak barrels where they aged for 17 months before being bottled in April, 2009.
TASTING NOTES: The 2007 Charmstone displays a deep ruby hue and inviting nose of cherry, blackberry and black currant fruit enhanced by subtle hints of toasty oak, cinnamon and cream. The palate is taut and intense with dark berry, plum and red cherry fruit clinging to firm tannins. The dark flavors develop into notes of cocoa, vanilla and coffee over the lingering finish. This wine will show even more complexity after a few years in the cellar or up to an hour in a decanter.
FOOD PAIRING: Despite a high percentage of Cabernet Sauvignon, Charmstone's bright fruit and fine tannins allow this wine to pair beautifully with lighter dishes like grilled shrimp and the complex flavors of stuffed eggplant as well as the usual array of steaks and chops.
