2000 Howell Mountain Cabernet Sauvignon
 Description   Press Acclaim

ORIGIN: The impressive and powerful 2000 Cabernet Sauvignon, Napa Valley - Howell Mountain features a blend of 95% Cabernet Sauvignon, 3% Malbec and 2% Petit Verdot. The firm tannins and concentration of hillside grown fruit are hallmarks of this complex, intense and elegantly balanced wine.

VINEYARD: The low yielding vineyard is located on a steep hillside at the 2,000-foot elevation on Howell Mountain, a small, unique appellation in northeastern Napa Valley. The climate contributes to a long hand time, resulting in optimal ripeness and tannin maturity.

WINEMAKING: The grapes were hand harvested in October 2000 and macerated on the skins for 26 days. The wine underwent malolactic fermentation in the barrel and was aged for 17 months in new heavily toasted French oak barrels. The wine was neither fined nor filtered before bottling in May of 2002.

ORIGINAL TASTING NOTES: A toasty, briary character complements the ripe black cherry, blackberry, cassis, tea, black peppercorn and violet aromas and flavors of this full-bodied Cabernet. Rich with velvety tannins and a distinctively long finish accented by cocoa powder and tobacco, this Cabernet may be enjoyed now or cellared for at least 15 years.

CURRENT TASTING NOTES: The 2000 Howell Mountain Cabernet Sauvignon is a bit softer than other vintages of this wine, but its elegance shines through. Refined berry and cherry flavors are evident in the glass and on the palate, and the finish just goes on and on. Drink now through 2015.

FOOD PAIRING: Sage Encrusted Rib Roast with Root Vegetable Ragout

This vintage produced 465 cases.
