1996 Rutherford Cabernet Sauvignon
 Description   Press Acclaim 

ORIGIN: Expressing cherry-berry fruit, herbs and the noted “Rutherford Dust” characteristics from this legendary Napa Valley appellation, this blend consists of 80% Cabernet Sauvignon, 15% Merlot, 3% Petit Verdot, and 2% Cabernet Franc.

VINEYARD: Grapes were hand harvested in late September and early October 1996 from Rutherford Ridge, Hidden Canyon and Crimson Creek vineyards, our three narrow spaced estate vineyards.

WINEMAKING: After hand picking, grapes underwent extended maceration for 15 to 25 days. This contact with the skins develops the expansive mouthfeel and tannin structure of the wine. Aged in new, one, and two-vintage-old French oak barrels for 17 to 18 months, this wine was not fined and was bottled in July 1998.

ORIGINAL TASTING NOTES: Bigger and riper than previous vintages, this Cabernet Sauvignon is deep and dark with intense flavors of cassis and raspberry mixing with warm toasty aromas. Remarkably complex, the long finish has great depth and length. Enjoy now or cellar for five to seven years.

CURRENT TASTING NOTES: This Cabernet Sauvignon has aged well for many years, but should be consumed soon. It has ripe berry and cherry aromas with earthy flavors of cassis that last through the well-balanced, lasting finish.

FOOD PAIRINGS: Braised Pork Shoulder, Grilled Lamb Sausages smothered in Peppers and Tomatoes, or for a dish with more international flair, try a Spanish Sopa de Ajo (spicy garlic soup with egg).

This vintage produced 10,600 (750ml) cases, in addition to 375ml and 3.0L formats.
