ORIGIN: The 1995 Cabernet Sauvignon, Rutherford, makes our 19th vintage of producing this wine. It is a blend of 84% Cabernet Sauvignon, 8% Merlot, 6% Petit Verdot, and 2% Malbec, and was crafted to express the cherry-berry fruit, green olive notes and smoky-herb "Rutherford Dust" characteristics for which this appellation is known. VINEYARD: The grapes are grown at the Andrus home vineyard and our other estate vineyards in the Rutherford bench area of the WINEMAKING: The grapes were hand harvested on September 20, 1995, and underwent extended maceration of 15-25 days. This period of contact with the stems further develops the mouth feel and tannin structure of the wine. It was aged in new, one to two-vintages old French oak cooperage for 15-18 months. The wine was lightly fined with egg whites prior to bottling in July 1997. ORIGINAL TASTING NOTES: The 1995 version of our famous Rutherford Cabernet exhibits more power and strength of flavor than most vintages. Cassis, raspberry, and hints of "Rutherford Dust" mix with the char flavors of the heavily toasted barrels. Long on the palate, this wine drinks well now due to its expansive mouth-feel but, with proper cellaring, will reward you for several years. CURRENT TASTING NOTES: This Cabernet Sauvignon has aged beautifully, and should be consumed soon. It has fruity aromas with flavors of oak and earth that come through on the mid-palate and finish. FOOD PAIRINGS: Braised Pork Shoulder, Grilled Lamb Sausages smothered in Peppers and Tomatoes, or for a dish with more international flair, try a Spanish Sopa de Ajo (spicy garlic soup with egg). The vintage produced 9,200 cases as well as 3.0L formats. |
