1998 Onyx

ORIGIN: Long known for our passion for Bordeaux varietals, we have expanded our portfolio to include our first wine blended from the classic and ancient varietals of the Cahors region of France. This inaugural release of Onyx is a blend of 54% Malbec, 23% Tannat, and 23% Merlot, all grown in our narrow-spaced, densely planted, hillside vineyards at our Rutherford Ridge Estate. The black wines of Cahors, by tradition and appellation law, can be produced from 70% Malbec, and only 30% Merlot and/or Tannat. It is our intent to follow the principle of this ancient tradition, with Malbec as the predominant varietal.

VINEYARD: With research in different soils, sites and topography, we have settled on the hillside of Rutherford as the best place to create our newest addition, Onyx. Fruit was hand harvested in early October 1998 from our close-spaced estate vineyards.

WINEMAKING: The wine was fermented, by varietal, in stainless steel tanks, and underwent extended maceration for a total cuvaison of 17 days. The blend was aged in new French oak barrels for 17 months and was bottled without fining or filtration. The wine was bottled in May 2000.

ORIGINAL TASTING NOTES: This densely-colored red-black wine opens with sweet, silky, round fresh red and black fruits. Among red currants, blackberries and cream, cola, and tobacco, is a hint of briar and raspberry tea. Experience a smooth lingering smoky, blackberry and black pepper finish in this medium bodied wine. Enjoy now or cellar for the next five to ten years.

CURRENT TASTING NOTES: The 1998 Onyx is ready to drink now, with big black cherries and red berries bursting from the glass. The wine is well-balanced with high tannins and ripe, fruity flavors on the extended finish.

FOOD PAIRING: Grilled Rib-eye with Chimichurri and Roasted Potatoes
